Recipe of cured sausage, potato, carrot & leek gratin
- Serves : 4
- 200g Maison Loste cured sausage
- 400 ml light single cream
- 150 ml milk
- 100g emmental cheese
- 400g potatoes
- 200g leek
- 200g carrots
- 1 garlic clove
- Nutmeg
- Salt & Pepper
Heat the oven to 180°C.
Bring the cream and the milk to the boil, then add the nutmeg and the grated cheese, stirring gently so that it melts. Leave to cool.
Prepare the vegetables : shred the leek and chop the potatoes and the carrots into rounds. Keep each different vegetable separate.
Cut the sausage into strips.
Halve a garlic clove and rub it around a gratin dish before greasing with butter. Arrange the vegetables and the sausage on the plate in successive layers, seasoning as you go.
Cover with the cream / milk / cheese mixture.
Bake for 55 mins at 180°C (if the gratin colours too quickly, cover with foil) then turn up the heat to 200°C and brown for 15 min.
Tip :
Mix things up by using seasonal vegetables or by replacing the emmental with another cheese !
